Garbanzo Beans aka Chickpeas
So you bought a can or two of garbanzo beans, aka chickpeas, and you had them in salad once but don’t know what to do with the rest. Well here’s an idea for you; Make Chocolate Chip Cookie Dough… That’s right a dip that everyone will go bananas for – but it’s healthy and not overly sugary!

Ingredients:
- 1 can garbanzo beans (aka chickpeas), drained and rinsed
- 1 1/2 T pure vanilla extract
- 1/8 tsp baking soda
- Pinch of sea salt
- 1/4 cup date sugar
- 4 T of your favorite nut butter
- 1 T coconut flour (you could also use 3 T ground flax seed or rolled oats)
- 1/4 cup to 1/2 cup milk, according to desired consistency
- 1/4 to 1/3 cup cacao nibs or dark chocolate chips
Combine all of the ingredients, except the cacao nibs or chocolate, in your food processor. Process until smooth and well blended.
Fold in the cacao nibs or chocolate chips.
And that’s it! Super easy…super healthy…super nommy!!!
Nom it up with whole grain graham crackers (make your own!), fresh fruit, or straight up on its own! You could also add a dollop on top of your favorite brownie or ice cream sundae…the possibilities are endless!
