Zingy and Spicy Split Pea Hummus
Here’s an idea to use up those split peas instead of just another batch of Split Pea Soup!
This is an easy recipe you can make ahead and enjoy it for a week! I’ve made this without a food processor before and the taste was still good, it was just a little chunkier – as expected.
Ingredients:
- 1/8 t. tumeric
- 1/2 t. crushed red peppers
- 3/4 t. cumin
- 2 t. garlic (or 2 fresh cloves)
- 1/8 c. lemon
- 1/2 c. olive oil
- 1 cup dried split peas
Rinse the split peas, then fill sauce pot with water – just over the peas – and boil until soft.
Combine all ingredients in a food processor (or blender) or blend until desired consistency. You can easily mash the peas if you don’t have a food processor. Salt to taste. Sprinkle crushed red peppers for a little decoration. I wouldn’t use too much more lemon. I used 1/4 cup and luckily I had more split peas to add in.
